What is the status with Porsche if you fit non OE tyres?

I know it's expensive but have you enquired at your OPC. Or drop an email to Pirelli. I've found they reply very promptly.

Any pictures of your gulf orange GTS?

The speed rating for summer tyre is Y but all season tyre is V. Is there a problem for warranty or car insurance even though they are both N0 tyres?

To stay within warranty, keep to N marked tyres / Porsche approved. Do not mix summer and winter, all season tyres on your vehicle. No insurance issues either if you abide by the above.

You've obviously led a very sheltered life. 50 years ago I was doing 120 on crossplys. I don't think speed ratings had ever been thought of.
