Must admit if PTS wasn’t so expensive I’d look at Speed Yellow with Pebble and black extended leather. I love your gulf orange and like the Gulf Blue too

The speed rating for summer tyre is Y but all season tyre is V. You've obviously led a very sheltered life. 50 years ago I was doing 120 on crossplys. I don't think speed ratings had ever been thought of.
